Van Eijk started the 2021–22 season as Ajax's third choice goalkeeper, behind Lize Kop and Isa Pothof, but both of them suffered injuries. On 22 June 2023, it was announced she had signed a one-year contract extension. On 11 June 2026, van Eijk signed for Bundesliga club Bayern Munich until 2029.
Van Eijk has represented Netherlands at different youth levels. In April 2025, she received her first call-up to the Netherlands national team as a replacement for injured Daphne van Domselaar.
